Mini Cheesecakes

Here are some tasty treats that my mum makes, she’s a star. They use sort of like an anzac biscuit, I believe Arnott’s Butternut Snaps are my mum’s preferred choice and you put them into a tray into a hot oven for a few minutes so they get soft, then you get them out and push them in the middle a little bit so they turn into a sort of dish. Then you mix up Philadelphia Cream Cheese with some lemon butter and you get a lemon cheese cake filling. Then spoon some of this mixture into the biscuit bases and letting them chill. These have been finished with a piece of peach on top. Super tasty and easy as to whip up. Perfect for an at home High Tea.
