Ahh Christmas Ham….. such wonderful stuff. Though there is always sooooo much of it! If you are still working through a large leg then why not whip up some of this tomato relish and have some ham and egg burgers for breakie!

Breakie Burgers with Christmas Ham and Spicy Tomato Relish
Serves 6
Ingredients
Spicy Tomato Relish – This can be made ahead of time and then stored in the fridge (keeps for at least a week). Can be served cold or reheated
- 1 tablespoon olive oil
- 1 medium brown onion (finely diced)
- 3 garlic cloves (crushed)
- 2 red chillies (deseeded and finely chopped)
- 700g ripe tomatoes (coarsely chopped)
- 1 tablespoon brown sugar
- 2 tablespoons white wine vinegar
- Salt and pepper
Other
- 1 tablespoon olive oil
- Sliced Christmas (leg) ham
- 6 white bread rolls (tiger rolls from Baker’s Delight worked a treat)
- 6 eggs
- Salt and pepper
Method
- Heat the oil in a saucepan over medium heat. Add the diced onion and stir frequently for around 5 minutes or until the onion starts to soften and look glossy.
- Add the garlic and chilli and cook, stirring often, for another 2 minutes.
- Add the chopped tomato to the saucepan and cook, stirring occasionally, until the tomato starts to soften (around 5 minutes). Season with some salt and pepper.
- Add the brown sugar and vinegar and cook for 10 minutes or until the relish starts to thickens. Set aside to cool.
- Add 1 tablespoon of oil to a frying pan and fry your eggs. Serving them with a nice runny yolk works well with the Christmas ham and relish.
- Cut the bread rolls in half and spread on some of the relish. Stack on the sliced Christmas ham and then carefully place the fried egg on top. Season with some salt and pepper.
- Enjoy! Super easy for Christmas morning or for Boxing Day or any day with any leftover ham.
