This year there are four regions to choose from – Gascoyne, Swan Valley & Surrounds, Peel and The Kimberley – each with a list of hero ingredients which are grown or produced in that region. You just need to choose a region and then a hero ingredient and come up with a creative recipe that best showcases it. Sounds like delicious fun to me!

The Peel region is one of the nine regions of Western Australia. It is located on the west coast of Western Australia, about 75 km south of the state capital, Perth. It consists of the City of Mandurah, and the Shires of Boddington, Murray, Serpentine-Jarrahdale and Waroona.
The Peel Region is part of a climatic transition along the west coast of Western Australia from north to south towards cooler temperature and more consistent rainfall. With a coastal plain bordered inland by the Darling Scarp, the Peel Region is situated amongst the highest rainfall areas of South Western Australia.

So let me tell you a little about the ‘there goes my hero’ ingredients for this region.
- Peel Sea Mullet and Sand Whiting, supplied by Wattsie’s Place (4thgeneration estuary fishermen)
- Baldivis Rabbit, supplied by Baldivis Fresh Farm Rabbit(whole)
- Harvey Beef – 100 day hgp free grain fed Cube roll and/or 100 day hgp free eye fillet sourced from Peel region ( Pinjarra and North Dandelup)
- Supafresh baby leaves, by Trodan Produce
- Borello Cheese – 59 Rice Road Oakford
- Linley Valley Pork – Available from Farmer Jacks and most independent retailers across Western Australia
There are some really lovely ingredients in this list, perhaps one you might not have cooked with before, and I’m sure one by themselves of a combination of a few would be entirely delicious! Peel is a region relatively close to the CBD with an abundance of beautiful produce. There’s still time to get your thinking caps on and enter a recipe in this competition. Entries need to be in by September 21st and can be submitted online here.
Semifinalists will be announced the week commencing October 5th and if you make it through to the semi-finals at Fraser’s Restaurant in Perth on 14 October, then you’ll get a helping hand from Peel Mentor Chef Jason Hutchen from Redmanna Waterfront Restaurant.
10 years ago, following a renovation and rebrand, Jason opened Redmanna Waterfront Restaurant to establish it as Mandurah’s leading restaurant. Redmanna has been named a national finalist in Restaurant & Catering WA’s ‘Best Seafood Restaurant’ for four years running and won the award in 2014. In addition, Redmanna has been a finalist in the Gold Plate Award’s category of Seafood Dining for the past seven years. Jason has been a chef for 27 years with extensive experience and a great passion in mentoring apprentices and trainee chefs.
