Monday, April 28th is a very exciting day for four lovely ladies from WA. It’s the regional final for the WA Signature Dish Competition for the beautiful Great Southern region and it will be held at Pepper & Salt Restaurant at Forest Hill Vineyard in Denmark.
The Great Southern region covers a 39,007km section of the South Coast of Western Australia and neighbouring agricultural areas. Towns within the region include Albany, Bremer Bay, Denmark, Frankland, Katanning, Kojonup and Mount Barker.
Ranging from spectacular coastline to rich agricultural areas, the Great Southern region is a major producer of livestock, especially lamb, and Albany is a major fishing centre. The region is also the most productive cereal grain and pastoral land in the state.

Q: How would you describe your style of cooking?
The cuisines I dabble in are diverse (I’ll give anything a go!), but my general theme is that I like to cook things that are relatively simple, fresh and don’t take hours of work to complete. I’m experimental and creative, I like trying new things and learning new techniques. I also like using my science background to research, investigate and experiment with the best way to cook things and how to match flavours.

Q: How would you describe your style of cooking?
I’m very varied. I like to cook from lots of different cuisines. Italian is a favourite I like making my own pasta etc. being a beef producer I cook a lot with beef also. I NEVER follow a recipe. Even if it’s a brand new dish I’m trying. I always manage to deviate off the path and add a bit more of this or a bit more of that depending on my tastes.

Q: How would you describe your cooking style?
Home cooking but I like to mix things up – jazz things up.
