BBQ’d Vegies

I’ve been on the TNT Diet for a few weeks now and with the exception of GG’s birthday weekend when we both did really applied ourselves and completely over indulged in all things cake, it’s getting easier to figure out what recipes to go with for dinner. And Sunday night it was time for kebabs again and the best thing to go with them was some yummy bbq’d vegetables.

Easy recipe – choose your favourite vegetables – this time around we went with red capsicum, zucchini, mushrooms and some yellow squash. I love squash and was great to stumble across some at the markets. So we cut this into pieces and mixed through some diced up garlic, olive oil and some salt and pepper. Throw this on the bbq til it browns up and your set. Super easy and nice to enjoy the continuing warm weather and keep the bbq cranking along.
