Plum and Chinese Five Spice Pork Summer Salad

A nice easy recipe for a weekend lunch. I’m mad for fruit in salads these days and quite enjoy pink grapefruit because it’s not over the top sweet. Also there always seems to be young coconut in our house these days because of my current coconut water addiction πŸ™‚

Plum and Chinese Five Spice Pork Summer Salad

Ingredients

  • 1 piece of pork fillet
  • Chinese Five Spice
  • Plum Sauce (I used Ayam Australia Plum Sauce)
  • Flesh of 1 young coconut (cut into strips)
  • 1 pink grapefruit (seeds removed and cut into thin wedges)
  • 1 punnet cherry tomatoes (halved)
  • 1 small cucumber (thinly sliced)
  • Half a Spanish onion (thinly sliced)
  • 1 bag of mixed greens
  • Small piece of ginger (grated finely)
  • Small bunch of coriander (roughly cut)
  • Olive oil
  • Salt and pepper

Pork

Turn on the oven to a moderate heat.
Put pork into a plastic container and liberally shake in some chinese five spice and plum sauce. Put the lid on and shake the dish around so the pork is fully coated. Let it sit in the fridge for a spell.
Heat up a fry pan with a little oil, quite hot. Sear each side of the pork fillet and then put in the oven for 10 minutes
Take out of the oven and let it rest
Slice into thin pieces

Salad

Combine all the other ingredients in a large bowl
Splash on some olive oil and some salt and pepper
Just before serving combine with the pieces of pork

Load up a bowl and dig in πŸ™‚
