Cauliflower Pizza

I love pizza. Just so much. I would have it on my list of ‘these are a few of my favourite things’ along with raindrops on roses and whiskers on kittens. But post Europe, GG and I have endeavored to aim to eat a bit healthier with less of an emphasis on carbs, so I’ve had to get creative in the kitchen. Given the versatility of cauliflower and because I’d heard there was a way to use cauliflower to make pizza bases I had this on my list of recipes to try whilst on my quasi health kick. I suppose for folks with gluten intolerances it also offers an alternative.

Cauliflower Pizza

Ingredients

  • 1 large cauliflower
  • 2 eggs (whisk slightly in a small bowl)
  • 1 cup grated Parmesan (though might not need this much)
  • Salt and pepper
  • Passata
  • Whatever toppings you like on your pizza – margherita, ham and pineapple, pepperoni, etc

Method
1. Preheat oven to 180C
2. Prepare a batch of cauliflower rice – recipe here if you have a thermomix or if not then you can use this one.
3. Try to get rid of as much excess water as possible, either use a sieve or squeeze out using cheesecloth if you have some available.
4. Transfer the cauliflower ‘dough’ to a bowl and allow to cool slightly.
5. Add whisked eggs, Parmesan and a good grind of salt and pepper and stir to combine well.
6. Cover two trays with baking paper.
7. Put half the mixture on each tray and shape into a pizza base. I found that using a potato masher worked well to get it into shape. You want it be relatively thin.

8. Pop into the oven for around 30 mins or when it starts to go golden and a little crispy around the edges.

9. While the pizza is in the oven get all your toppings chopped and ready.
10. When the bases are looking golden, remove from oven and spoon 3 or 4 tablespoons of passata onto each pizza base and gently spread it on. These bases are far more delicate than pizza dough so handle with care.
11. Add your chosen toppings and pop back in the oven for another 10 to 15 minutes.

12. Ready to eat! Would suggest you dig in with knives and forks because it is tricky business to pick up a slice.

So is it as good as regular pizza? Well probably not quite the same as the magic of real pizza dough, but it did a good job to make me feel like I was being a little bit naughty and eating pizza on a Friday night while watching the footy, so it gets two thumbs up for that!
