This is what you call a breakfast of champions! My cousin Mark whipped it up and I swear they are the most perfect little poached eggs I have ever seen!! As easy as boiling up a big pot of water, with some white vinegar added, then throwing the eggs in then scooping them out with a slotted silver spoon. They were seriously wonderful. It’s one of the best breakfast techniques I’ve picked up. I think I always found poached eggs to daunting. Nice to know they are do-able! If you fancy them soft they only take a few minutes.
