Hylin- Breakfast Bruschetta Battles Continues!

Bravo Hylin. You’ve just sparked a renewed battle. The battle raged on last year but now round two begins. The battle of the breakfast bruschetta. It is just one of my most favourite breakfasts because you get the delicious oozy mess of a poached egg or two, on top of a mountain of fresh tomato. I love that freshness and that so many places have their own spin. Some places really up the herbs, some crumble on a little feta or drizzle on a swirl of balsamic and each of these creative options has proven to be delicious!

So when I headed back to Hylin recently and saw it on the menu I knew that’s what I’d be ordering.

Breakfast Bruschetta – Poached Egg, Rocket, Cherry Tomato, Avocado, Fetta, Fried Shallots on Ciabatta

It was a vision. Would say it was the prettiest breakfast bruschetta I’ve ever eaten. The strategic squiggles, the smattering of micro herbs, those two perfectly poached eggs! I took a moment to appreciate it before attacking it with my knife and fork. It was a little mouthful of breakfast heaven, with the creamy avocado, the refreshing tomato, the crunch from the slightly charred bread and the silken river of golden yolk.

I could wax lyrical about this breakie for a good, long while, so was I enamoured with it. With all those ample ingredients it was filling, so I was grateful that it was only one slice of bread. Just meant you needed to watch you egg to bread ratio, which lets face it I was always going to do.

I’d say that such a memorable breakie kicked a lot of goals, I was definitely full til lunchtime and it just generally put me in a great mood for the rest of the day. Might sound a bit funny to let a plate of eggs dictate my mood, but different things bring people joy and for me on that Friday joy looked like a breakfast bruschetta, so thanks Hylin, battle back on and you’re in the lead.
